What Size Egg is Right for Me?

Grilling on The Big Green Egg

  1. The Big Green Egg is designed specifically for natural lump charcoal and live fire. Lump charcoal burns hotter and creates less ash than briquettes.
  2. Temperature control is very important to learn on the Big Green Egg. Small vent adjustments make a big difference.
    1. The Bottom Vent – controls airflow entering the Egg.
    2. The Top Vent – controls airflow exiting the Egg.
  3. Ceramic cookers hold heat very well, so temperatures change gradually. Remember to make small adjustments and wait 10-15 minutes between changes to allow the Egg to stabilize before cooking.
  4. There are over 50 configurations available to you, including the convEggtor for indirect cooking and smoking, pizza stones, roasting trays and more.

First Cook Ideas for Beginners

Before you tackle a low and slow brisket, start with a beginner-friendly recipe. We have included one for chicken wings that is perfect for a beginner.

Smoked Chicken Wings on the BGE

Ingredients:

  • 3 dozen chicken wings
  • BGE Sweet & Smoky or Savory Pecan Seasoning
  • BGE Habanero Hot Sauce
  • Equipment – convEGGtor

Directions:

  1. Set the Egg for indirect cooking with the convEGGtor and a disposable drip pan at 225°F.
  2. Rub 3 dozen wings liberally with Sweet & Smoky or Savory Pecan Seasoning
  3. Smoke the wings, turning occasionally, for 1 ½ to 2 hours or until the internal temperature reaches 165°F or higher.
  4. Toss the wings in your favorite wing sauce. Enjoy!

The Egg is surprisingly low maintenance. After cooking: Close vents to extinguish charcoal, Remove the excess ash regularly, Brush grates while warm, and Keep the Egg covered when not in use.

The Big Green Egg Safety Tips

  1. Exercise caution at all times. If you are assembling or using an Egg for the first time, please read the First Timer Tips.
  2. Always be aware of fire hazards and surroundings when using the Egg. Never leave the EGG unattended or open in high winds.
  3. Position the Egg in a safe, level spot, avoiding slopes or areas prone to tipping over. Use locking casters on the Nest wheels and never move the Egg while in use or when hot.
  4. Keep combustible items away from the Egg and ensure proper ventilation.
  5. Use extreme caution when handling or removing hot cooking surfaces such as the cooking grid, convEGGTor, or pizza/baking stone.
  6. Always use protective gloves or gripping tools to avoid burns.
  7. Avoid using lighter fluid or any flammable liquids in the Egg. Never use water to extinguish charcoal in the Egg.
  8. Never store a hot Egg inside any enclosed space or vehicle.
